This recipe is one of my husband’s absolute favorite comfort dishes that I make. I mean, what could be better than a rich, meaty, and hearty gravy topped with wonderful mashed potatoes?! Not a whole heck of a lot!
Filling:
1 LB 95% Grass Fed Ground Beef
3 Large Carrots, Medium Diced
2 Stalks Celery, Medium Diced
1 Bay Leaf
3 TBS Flour
3 TBS Olive Oil
32 Oz. Beef Bone Broth
Brown the ground beef in a large oven-proof saute pan
*****You will want to start your mashed potatoes at this point*****
Add chopped vegetables and bay leaf to pan
Stir occasionally and cook mixture for 5 minutes
Sprinkle in flour and stir until well incorporated
Cook mixture for 3 minutes in order to get rid of the raw flour taste
Carefully add broth to pan and bring to a boil for 1 minute
Turn head to medium low and simmer for 30 minutes or until the vegetables are tender and the sauce has thickened (be sure to stir occasionally)
Mashed Potatoes:
6 Medium to Large Yukon Gold Potatoes, Washed and Cut into Medium Sized Chunks
1/2 Stick of Butter
1/2 Cup Heavy Cream (You can also use milk or yogurt if you’d like)
Salt and Pepper to taste
Add potatoes to a large sauce pot and add enough cold water to reach 1 inch above potatoes ( You will also want to salt the water with a good tablespoon of salt)
Bring to boil and stir occasionally
Cook until fork tender (About 20 minutes)
Strain potatoes and add them right back in the sauce pan
Mash potatoes with either a potato masher or a fork until no visible chunks are seen
Add in butter and heavy cream and stir until completely combined
Salt and Pepper to taste
Assembly:
Carefully remove the bay leaf and pour gravy mixture into a medium sized casserole dish
Add mashed potatoes on top ( You can either be fancy and pipe them on with a piping bag and star tip, a plastic bag with the tip cut off, or you can just use a rubber spatula and spread them on)
Place dish in broiler and broil until the mashed potatoes are golden brown and delicious
Carefully remove from broiler and serve immediately
PS: This dish makes the best left overs!
