The perfect brunch dish! This breakfast bake is easy, delicious, and is sure to impress!
6 Eggs
2 C Milk
1 tsp Salt
1/2 tsp Pepper
1 Loaf French Bread
1 C Pancetta, diced and crisped
1/4 C Sundried Tomatoes, chopped
1/4 C Fresh Basil, chopped
2 C Fontina Cheese, shredded
Preheat oven to 350
Lightly grease large casserole dish
Tear French bread into bite size pieces and layer in casserole dish
In a large bowl whisk eggs, milk, salt, and pepper together
Add in tomatoes, basil, 1 cup of cheese, and 1/2 cup of the cooked pancetta
Mix until combined
Pour mixture over bread evenly
Lightly press egg mixture into bread, making sure all pieces of bread are covered
Cover with tinfoil and bake for 45 minutes
Carefully remove foil and top with remaining cheese
Place back in oven and bake uncovered for 15 minutes
Let sit for 10 minutes
Top with remaining pancetta and chiffonade of basil and serve
*Pancetta can be swapped out with Bacon as long as it’s not a sweet or smoked flavor*
* Fontina can be swapped out with Mozzarella*
* You can use 2 gluten free French baguettes in place of regular French bread*
