One of the best side dishes you could serve up next to pretty much anything! So fresh tasting with incredible textures, this will be your next go to dish!
I’m fortunate enough to live in an area that has THE BEST sweet corn around! Ever since I was little, end of July meant 1 thing… it’s sweet corn season! Boiled, grilled, fresh, you name it, we ate it!
5 Ears of Corn
4 T Olive Oil
Juice of 1 Lime
1 Jalapeño, deveined and deseeded, finely chopped ( I taste my pepper before adding all of it in. Some peppers seem to be more spicy than others. Work with what you’re comfortable with)
1 Small Red Onion, finely chopped
2 Large Tomatoes, small chopped
1/4 Fresh Cilantro Leaves
Salt and Pepper to taste
Place ears of corn in microwave and cook for 5 minutes
Preheat grill to 450
Let sit for a couple minutes before handling
Carefully remove corn, cut off the end, and carefully remove husks and silks
Place cleaned corn on grill and cook for 15 minutes, making sure to turn them over every couple of minutes
Remove corn and set aside until cool enough to handle
Very carefully, take a sharp knife and remove the kernels from the cob
In a large mixing bowl, combine corn, tomatoes, jalapeño, and red onion
In a food processor combine olive oil, lime juice, and cilantro
Blend until for 1 minute
Salt and Pepper to taste
Add dressing to corn mixture and stir until everything is completely coated with dressing
Chill for at least 1 hour before serving
Enjoy!
