It’s that time of year again where Summer and Fall are playing games with our hearts (Que Backstreet Boys) and I’m not quite sure how I feel about it. But what I am sure of, is that you NEED to make this stew! Each bite is like an edible hug and best of all it’s easy (did I mention it’s made in a crockpot?!) and it’s healthy!
3 Large Carrots, chopped
2 Stalks Celery, chopped
1 Bunch Kale, chopped
1 Small White Onion, small diced
2 T Garlic, minced
1 28oz Can Diced Tomatoes
1 32 Oz Carton Chicken Stock
1 Package Boneless Skinless Chicken Thighs (about 6 thighs)
1 Can Cannellini Beans, rinsed and drained
Salt and Pepper to taste
Parmesan Cheese (Optional)
Add the first 8 ingredients to a crockpot
Stir until combined
Cook for 4 and a half hours on high
Carefully add in cannellini beans
Cover and cook for additional 30 minutes
Salt and pepper to taste
Serve with freshly grated Parmesan cheese and crusty French bread
