
Who said pesto had to be green?! A unique twist on a classic, this pesto is filled with bright flavors and textures and can be used in so many other dishes. This pasta dish comes together in less than 20 minutes and will soon be one of your favorites!
1 Package Fresh Fettuccine
8.5oz Jar Sun Dried Tomatoes in Oil
1/2 C Pecorino Romano, freshly grated ( plus more for garnish)
1/4 Pistachios, shelled
1 Clove Garlic
10 Large Fresh Basil Leaves (15-20 small leaves)
Salt and Pepper to taste
Bring a large pot of salted water to a boil
Cook pasta according to package instructions
While pasta is cooking, add the remaining ingredients to a food processor and mix for 1 minute or until all ingredients are completely combined
Salt and pepper to taste
Add 3/4 C pesto to a large pasta bowl
Carefully add pasta directly from water to bowl
Gently toss pesto into pasta ( you can add more pesto depending on desired taste)
Top with grated Pecorino Romano

- Note- Pesto recipe makes more than needed for 1 package of pasta. Store leftovers in refrigerator. Would be great in a sandwich, on toast with a sunny-side up egg, or to dip fresh veggies in.
