
Pasta coated in a creamy and peppery sauce that comes together in a matter of minutes. This classic Italian dish is a cinch to make and has less than 5 ingredients! Fun fact- Cacio e Pepe translates to ”Pepper and Cheese” Ciao!
1 Package Fresh pasta- I use either Linguine or Fettuccine
4 T Butter
1-2 T Freshly Cracked Black Pepper depending on preferred spice level- I use a medium course grind and about 1 1/4 T
1 1/2 C Parmigiano Reggiano- freshly grated
In a medium saucepot, bring 5 cups of lightly salted water to a boil
Add in pasta and cook according to directions on package
While pasta is cooking, melt butter in a large sauté pan on med low heat
Add in pepper and mix to combine
Once pasta is cooked, reserve 1/2 C pasta water and drain pasta- Do Not Rinse
Add water to sauté pan and bring mixture to a boil stirring constantly
Remove from heat and add pasta
Immediately add half of the cheese and stir vigorously until completely combined
Add remainder of cheese and stir again until completely combined
Salt to taste
Twirl pasta on a plate
Garnish with freshly cracked pepper
