Packed with tons of flavor this dish is both creamy, slightly spicy, and is on the healthier side. The perfect week night dinner made in less 30 minutes!
1 Box Penne Pasta( I use gluten free) cooked
3 T Olive Oil
1 Small Onion, small diced
1 12 oz Package Italian Chicken Sausage, sliced in 1/4 pieces
5 Garlic Cloves, Minced
1 28oz Can Whole San Marzano Tomatoes, hand crushed
1 T Italian Seasoning
Crushed Red Pepper to taste
Fresh Basil
1 C Creamy Ricotta
Cook pasta according to directions on the box (do not rinse pasta)
While pasta is cooking, heat olive oil in large sauté pan on medium low heat
Add onion and sauté until translucent
Add chicken sausage and cook for 5 minutes, stirring occasionally
Add garlic and cook another 2 minutes, stirring occasionally
Carefully add in tomatoes, Italian seasoning, and crushed red pepper( I add 2 small shakes)
Stir until combined
Cook for 10 minutes, stirring occasionally
Salt and Pepper to taste
Remove from heat
In a large serving bowl combine pasta and sauce and toss until combined
Top with torn fresh basil and small dollops of ricotta
Serve Immediately and enjoy!
