One of my all time favorite potato recipes! My mom recreated this dish from a restaurant she went to in San Diego and we’ve been making it ever since! Crispy and flavorful are just a couple words to describe these beauties. The perfect side dish for dinner or brunch.
3 T Olive Oil
1/4 C Fresh Rosemary, minced
1 T Garlic Powder
Salt and Pepper
1/4 C Roasted Red Peppers, chopped
1/2 Crumbled Feta
Preheat oven to 400
Add potatoes to a large pot of cold water
Bring to boil
Boil for 5 minutes
Drain and let cool completely
Slice cooled potatoes in half
Add to a large sheet pan
Top with olive oil, rosemary, garlic powder, and salt and pepper
Toss until combined- taste potato to ensure they are seasoned enough
Add to oven
Bake 10 minutes
Carefully remove pan and gently toss potatoes
Add back to oven and bake another 10 minutes
Remove pan and gently toss potatoes
Bake 5 minutes
Remove pan and add roasted red peppers
Gently toss potatoes and peppers
Bake additional 5-10 minutes or until potatoes are golden brown and crisp
Carefully add potatoes to platter and top with crumbled feta
Serve immediately
