
A delicious and simple dish to feed a crowd or have leftovers for days!
1 Package Shredded Potatoes O’Brien
1 16oz Breakfast Sausage Roll cooked, crumbled, and cooled (can also use chopped bacon or ham)
12 Eggs
1/4 C Water
2 C Cheddar Cheese, shredded
Preheat oven to 375
Lightly grease a large casserole dish
Add shredded potatoes to casserole dish and lightly seasoned with salt and pepper
Whisk eggs and water together until completely combined, about 1 minute
Add cheese, sausage, salt, and pepper
Stir to combine
Pour egg mixture over potatoes
Gently move around potatoes in eggs with your hands until potatoes are covered
Bake uncovered for 45 minutes
Remove from oven and let cool for 5-10 minutes before serving
