Classic Caprese flavors made into a delicious one-pan chicken skillet! This recipe has got to be one of my favorites. Not only is it quick and easy to make, it has one of my favorite flavor combos of all time; Caprese.
Olive Oil
1 Package Chicken Thighs
1/2 t Garlic Powder
1 Pint Grape Tomatoes
Handful Fresh Basil Leaves, Chiffonade
1/2 C Shredded Mozzarella
Balsamic glaze (store-bought or homemade)
Salt and Pepper
Heat olive oil in an oven proof saute pan
Season chicken with salt, pepper, and garlic powder
Cook for 4 minutes per side on medium heat
Add tomatoes around chicken and place in 400 degree oven for 10 minutes or until tomatoes have blistered and chicken has an internal temperature of minimum 165 degrees
Carefully remove pan from oven and sprinkle shredded cheese over chicken and place back in the oven for 5 minutes
Top with basil and balsamic glaze
Serve over pasta or spaghetti squash
***If you want to make your own balsamic glaze here’s how:
Add 1/4 C balsamic vinegar and 1/2 t honey to small sauce pan and simmer until reduced to thin syrup consistency***
