The easiest and healthiest way to eat potato soup! Summer has come and gone, and Autumn is settling in in my neck of the woods. Tis the season for soup and all things comfort. Not only is this soup simple to make, it’s gluten free, can be made vegan, and can easily be made into a couple different flavor profiles.
10 B Sized Yellow Potatoes, Peeled
6 Cups Cold Water
2 T Heavy Cream (optional)
Salt and Pepper to taste
***To make Loaded Potato Soup add Crumbled Bacon, sliced Green Onions, and shredded Cheddar Cheese when serving***
***To make curry style, add 1 tablespoon of your favorite curry powder when seasoning***
In a large soup pan add potatoes and water and boil until potatoes are fork tender ***do NOT drain***
Carefully blend potatoes and water with an immersion blender or standard blender until smooth
Add cream and season to taste
