
A healthy and delicious dinner ready in under 30 minutes! This filling is so flavorful, it dances around on your tongue with its slightly sweet, slightly acidic, and slightly spicy flavor.
12- 16 Green Leaf or Butterhead Lettuce Leaves
3 T Olive Oil
1 Lb Ground Turkey
1 T Fresh Ginger, grated
1 T Garlic, minced
1/2 C Carrots, shredded
3 T Coconut Aminos
1 tsp Toasted Sesame Oil
2 T Rice Vinegar
1/4 tsp Cayenne Pepper
Juice of half a Lime
1 T Cilantro, finely chopped
3 Green Onions, thinly sliced
Salt And Pepper to taste
Heat olive oil in a large sauté pan on medium heat
Add turkey and cook until browned and cooked through, about 5-7 minutes, while breaking it up into small crumbles
Add ginger, garlic, and carrots
Stir mixture and cook for 5 minutes being sure the garlic does not burn
Add in coconut aminos, toasted sesame oil, vinegar, and cayenne pepper
Stir until thoroughly combined
Simmer mixture for 5 minutes on medium low heat, stirring occasionally
Add in lime juice
Salt and Pepper to taste
Remove from heat and stir in cilantro
Stack two lettuce leaves on top of each other
Top lettuce cups with meat mixture (about 1/4 C per leaf depending on size)
Garnish with green onion
Serve immediately
