The perfect breakfast dish for a crowd! Easy, delicious, and is best made the day before!
This recipe is an ode to my mom, who LOVES Cherry Cheesecake. Now she can even have it for breakfast!
1 large loaf French Bread, Cubed
6 Eggs
1 1/2 C Half and Half
1/4 C Pure Maple Syrup
1 tsp Vanilla
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Salt
1 8oz package Cream Cheese, cut into 18 cubes
2 21oz can Cherry Filling
Assembly
Lightly grease 13×9 casserole dish
Add half the bread cubes to casserole dish
In a large mixing bowl, whisk eggs and half and half
Add syrup and spices and whisk until throughly combined
Add 9 cubes of cream cheese on top of bread
Spoon 1 can of cherry filling on top of bread and cream cheese
Add remaining bread cubes
Evenly pour egg mixture over bread and gently push down to ensure everything is covered in the egg mixture
Top with remaining 9 cubes of cream cheese
Cover with tinfoil and refrigerate for at least 6 hours or preferably overnight to allow bread to soak up the egg mixture
Baking
Preheat oven to 350
Remove dish from refrigerator, leaving tinfoil on, and let sit for 20 minutes before baking
Place covered dish in center rack of oven
Bake for 45 minutes
Remove tinfoil and bake additional 20 minutes
Carefully remove dish and set aside
Add 1 can of cherry filling in small saucepan
Heat on low until warm
