An easy and comforting soup filled with cabbage and flavor!
Its starting to feel like Spring in these parts, but it’s actually just the beginning of Winter. Cold and gloomy weather screams comfort food and this recipe gives you that warm fuzzy feeling without the added calories!
2 T Olive Oil
1 lb Ground Beef or Ground Turkey
1 Small White Onion, small diced
1 Small Green Cabbage, chopped
8oz Tomato Sauce
28oz Diced Tomatoes with Juice
32 oz Beef Stock
2 Bay Leaves
1/2 t Paprika
1/4 t Fennel Seed
2 t Salt
1/2 t Pepper
In a large soup pan or Dutch oven add olive oil and sweat onion until translucent
Add ground meat and cook until browned
Add cabbage, paprika, and fennel seeds and cook for 10 minutes; stirring occasionally
Add in tomato sauce, diced tomatoes, and beef stock
Season with salt and pepper and add in bay leaves
Bring to boil and reduce heat to low and simmer for at least 1 and a half hours or up to 3 hours
Serve with warm crusty bread and enjoy!
