A healthy Mediterranean dish that can be served up any time of day! You will LOVE the way this makes your house smell! A flavorful tomato sauce with slightly runny egg yolks scooped up by warm pita bread makes this dish so rich and satisfying. It’s as fun as it is to eat as it is to say!
2 T Olive Oil
2 Cloves Garlic, minced
1 small White Onion, small chopped
1 1/2 tsp Paprika
1 tsp Cumin
1/2 tsp ground Coriander
1 T Tomato Paste
1 28 oz can Whole Plum Tomatoes
Salt and Pepper to taste
5 Eggs
1/4 C Cilantro Leaves, chopped
1/4 C Freshly Crumbled Feta
Pita Bread
Preheat oven to 400 degrees
Heat olive oil in a large ovenproof sauté pan
Add garlic, onion, paprika, cumin, and coriander
Mix and cook on low until fragrant
Add in tomato paste and cook for 2 minutes
Turn up heat to medium high and gently squeeze the tomatoes between your hands to crush the tomatoes ( make sure you add in the juice from the can as well)
Stirring occasionally, cook for 20 minutes until sauce becomes thick
Salt and pepper to taste
With a spoon, carefully make 5 wells in the sauce and crack an egg in each of them
Place pan in oven and bake for 7-8 minutes, depending on how you like your eggs cooked
The whites should be cooked and the yolks should be slightly runny
Carefully remove pan and top with cilantro and feta cheese
Serve immediately with warmed pita bread
*** For added protein, add 1 cup of canned garbanzo beans before adding eggs***
