A quick, easy, and delicious soup perfect for a chilly day! I look forward to the colder months for only a few reasons. Holidays, cozy sweaters, and of course comforting food. This recipe is hearty enough on its own with a piece of buttered bread or pair it with a nice hot sandwich. Either way, you’ll definitely feel satisfied.
1/4 C Butter
1/4 C Flour (I use Gluten Free)
2 C Milk ( I use original Unsweetened Almond Milk)
2 C Chicken Bone Broth
3 Small Heads Broccoli, Chopped
2 Large Soup Carrots, Shredded
2 C Sharp Cheddar, Shredded
Melt butter in a large sauce pot
Slowly add in flour and stir until combined (This is called a Roux and will help thicken the soup)
Cook 3 minutes stirring occasionally
Slowly add in the milk while whisking constantly to rid any lumps forming
Slowly add stock while continuously whisking
Bring to boil
Add chopped broccoli and carrots
Cook until vegetables are tender
Salt and pepper to taste
Remove from heat and stir in cheese
Enjoy with crusty bread and butter; yum!
